Le Schiavette
RECIOTO DI SOAVE CLASSICO D.O.C.G.
Species of vine
Garganega 100%
Vineyards
The name of this wine is “Le Schiavette” because the bunches of grapes are picked in the “Schiavette” area near Castelcerino in the middle of the Soave Classico zone.
Production process
The best grapes of Garganega are picked by hand in the first ten days of September , then put into boxes where they rest to wither in dry and well-ventilated rooms: the “fruttai”. In about late February the dried grapes are pressed and the must is left to ferment in small oak casks until the following year. This refining process is only completed after further maturing in the bottles.
