Species of vine: Garganega 100%
Vineyards: Lying in the hills around Brognoligo, in the middle of Soave Classico zone, in the Monte Grande area ,supported by Verona style pergola vine trellises.
Production process: The previously selected grapes are harvested by hand around the middle of October when fully ripe. After carrying out a soft pressing the must has to be cooled and decanted. The fermentation takes place on selected yeasts for a month at a temperature of 10-18 °C. Thirty per cent of the new wine is refined in oak casks, 70% in steel containers where it remains until spring.
Wine qualities :
Bouquet: Fine and intense smell with a mixture of fruity and spicey traits;
Flavour: harmonic and round, with a good structure and a characteristic almond backtaste.
Alcoholic content: 13 % vol.
Serving suggestions: To be served at a temperature of 10-12°C. Ideally it goes well with hors d'hoeuvres, pasta, soups, white meat dishes and cheese.
